Yeah, I’m having a hard time starting this We Could Live Here blog with a post about Amarillo but stay with me.  I’ll explain.

Last year when we were just passing through on our way to Colorado, we ended up with an unplanned two-night layover in Amarillo due to a clogged fuel filter in the RV.  That’s how we discovered 575 Pizza.  The name comes from the pizza oven temperature and the result is one of the best pizzas either of us has ever had.  We just love the burnt edges on the pepperoni and that thin, crisp crust.

Add the New Belgium 1554 on tap and we definitely could live here – at least overnight anytime we’re just passing through!
